This sugar pea micro green recipe with orange ginger dressing is vegan and gluten-free, really easy and tastes great.
There are about 20 minutes of prep and 2 minutes of cooking. 4 BIG salads
8 ounces pea micro greens
2 Tablespoons EVOO
1 Teaspoon minced fresh ginger
3 Tablespoons freshly squeezed OJ
1 Tablespoon good honey. Try maple syrup also
1 Tablespoon chopped fresh mint leaves
3 scallions chopped
Salt to taste (Celtic sea salt)
Saute ginger in EVOO for 1 minute - add orange juice and honey saute one more minute.
Remove from heat and add mint and scallions .Pour mixture over greens and toss to combine. Sprinkle with salt and serve. Flavor intensifies with time.
